More than a meal, this is dinner as theatre: ingredient-driven, expertly paced, and unapologetically precise. With its roots linked to the legacy of the Krug Champagne House, this is French fine dining reimagined with bold creativity, where every dish is curated with intention, art, and emotional resonance. 

The Experience

Dining here is a multi-course progression currently titled “EXPeRiMENCe 0.1” inspired by elemental forces: Earth, Water, Wood, Wind, Fire, Nature, Ice, Fruit, and Stone. Each dish arrives with its own visual language and story. 

Langoustine with white onion, cauliflower, and beetroot opened the evening with delicate sweetness and depth. 

Hamour paired with foie gras, lemon and ginger felt like a collision of land and sea balanced by caviar. 

Monkfish with saffron, celery, and coriander stood out for its precise texture and aromatic lift. 

A standout for many: Rigatoni with quail, white truffle foam, and slow-cooked egg rich, intense, unforgettable. 

Each plate was part of a story and never once did it feel repetitive or forced. There’s a meditative rhythm to the progression, from warm to cool, bold to restrained. Everything is composed in near silence, heightening your focus on taste, smell, and texture. 

The Chef

At the helm is Chef Alexis Knecht, whose career began at the age of 16 in France’s L’Auberge de Lisala. With over two decades of experience shaped by the techniques of Robuchon, Bocuse, and Gagnaire, Chef Alexis brings a sincere and personal approach to gastronomy. 

In 2024, he was featured in the Krug Cookbook for a signature single-ingredient recipe a hallmark recognition in the world of haute cuisine. 

“Always cook like you would for the person you love most. That’s how I want guests to remember my food like a memory from home,” Chef Alexis has said. 

That philosophy permeates every course. 

Ambiance & Service

Evoking a 19th-century estate dining room in the French countryside, the décor is restrained, warm, and intimate. You’re not seated in a room full of tables you’re seated at the table, with the chef never far from sight. The staff are quiet professionals, anticipating needs without interruption. 

There’s no music, no noise only the quiet rhythm of dishes arriving, wine being poured, and conversations held in low tones. It’s intentionally minimalistic, with the meal and setting doing the storytelling.

With Beverage Pairing – BHD 120 

Given the exclusivity, bookings are required in advance. Dietary requirements are accommodated with prior notice.
